1. Stuff your olives with a stuffing of choice (e.g., mozzarella cheese, feta, goat cheese, herbed Boursin cheese, pickled or roasted garlic cloves, chillies).
2. Whisk together the ¾ cup flour with the water and a pinch of salt to make your batter. Adjust consistency with more flour or water until it resembles pancake batter. Set aside.
3. In a separate bowl, add ¼ cup plain flour and set aside.
4. In a third bowl, add in your breadcrumbs.
5. In a small saucepan, bring the neutral oil to high heat, around 350F.
6. Using a toothpick or fork, dip each olive first in the plain flour, then in the batter, and finally coat thoroughly in the breadcrumbs.
7. Carefully add the breaded olives into the hot oil, about 5 at a time, and fry for a few minutes until they are golden brown.
8. Serve hot with any sort of aioli or dip and enjoy!
